The Perfect Vegan Sandwich

For this recipe you’re going to need a few ingredients:
1 large tomato
2 slices of bread
½ cup of spinach
¼ cup vegan mayonnaise
1 clove of garlic (minced)
1 teaspoon of vegan butter
1 teaspoon of olive oil
A pinch of oregano
A pinch of salt and pepper

First, preheat your oven to 350 degrees F. Next, take a large tomato and slice it into thin pieces. Place the tomatoes on a baking sheet with foil, and drizzle each tomato with a little bit of olive oil and sprinkle it with salt and pepper. You can put the tomatoes in the oven for 15-20 minutes.
While the tomatoes are in the oven, use a bowl to mix vegan mayonnaise, garlic and a little bit of sea salt and pepper until combined.
Take two slices of any bread of your choice, and spread vegan butter on each side. On medium heat, put each piece of bread (butter side down) on a pan until golden brown.
On medium heat in another pan, cook spinach with a little bit of olive oil for about 3 minutes. Add a little bit of salt and pepper into the spinach while it’s cooking.
It’s time to assemble your sandwich. Add roasted tomatoes to one side of your sandwich, and your cooked spinach to the other. You can choose to add chia seeds to each slice, for taste.
Your sandwich is ready to devour, enjoy!
